Gluten Free Mother of 3
My husband and I are the parents of 3 little rascals, aged 2,4 and 7. We are crazy busy with school, sports activities, home-improvement projects, chicken farming and gardening. My husband was diagnosed with Colitis a few years ago and was told to go "gluten free". After a depressing time having to give up his favorite foods, I decided to try some GF baking. The first MANY attempts were awful. I bought the wrong flours, and tried to bake as I always had. Through lots of trial and error, and internet searching and cookbook reading, I finally realized that baking gluten free is a lot different that baking with regular flour. GF flours are more fibrous and soak up more liquid. They need extra egg and cohesive ingredients to keep everything together. I have found that going gluten free does not mean you have to give up the foods you love. I now can make nearly anything with gluten free flours that taste almost as good if not as good as the gluten containing version. So, now we are a GF household and I don't think anyone really knows the difference anymore! You can still be imaginative and have fun creating tasty baked goods. I hope this blog will inspire you to try something new!
